We had a wonderful time at Cedarbrook! This was our second time here, but our first time really enjoying the grounds and people. We are roller coaster lovers and our old hang out campground has closed. My husband is the “seeker” between us and he found a gem in Cedarbrook as a new family friendly place to camp!! They also claim to be the closest campgrounds to Kings Island!

Pulling into the campgrounds is it clear that the sites are large and very clean. Every single site seems to have a shade tree and the fire pit area is large with a built in pit. Because of my health and because our four cats travel with us and it is important that we are able to run air conditioning and have shade to aid the temperature in the trailer. Electric, water and sewage are available. The sites where also level, making it easy to park our trailer.

Because this was a “working” vacation for both of us, it was also important to have WIFI. The day we tried, WIFI failed, so we walked up to the office. One of the owners, Stacy, went all out to get it up and running again while we waited. Then it worked like a charm! One of the better connections in our travels! We got done just what we needed. So, we were able to cap off the night with a swim in the pool (water levels checked multiple times a day) and a “free use of” DVD movie.

Oh, did I forget dinner? We are on vacation, so we treated ourselves to “The Snack Shack” on site. Stacy was now working her shift here and we got to hear more about the beginnings of the cozy campground and the family love that is still involved daily. Her grandfather had a vision about his field someday being a great area to stay because it was half way between Canada and Florida. Then Kings Island was built bringing even more campers their way. Chuck Wagon Style - Western Bean Casserole

Recipes for picnics & tailgating

1 pound hamburger (or venison).
2 cans Pork and Beans (or any other combo of bean type that you want like Lima, black, red, pinto).
1 teaspoon prepared mustard
¼ teaspoon salt
¼ teaspoon pepper
1 large onion
½ cup catsup
1 tablespoon Worcestershire sauce

Fry hamburger until brown and separated. Drain off any excess fat. Add the beans and the other ingredients. Stir well, but don’t mash the beans. Place in a 1 ½ quart covered casserole dish. Place dish in a preheated 350 degree F. oven. Bake for 40 minutes.

An excellent dish for picnicking!

We prepare it at home. Then we use our grill (http://www.camptosee.com/product/776-00-175 ), set the casserole dish right on the grill, to reheat. Or use a pot as if it were a chili to reheat.

Serve plain, as a dip, on a bun like sloppy joe , or as nacho filler and topping. Enjoy this old time chuck wagon style casserole.

We make a yearly trip to the Cape May, N.J. area. We find several things to do there including Morey’s Pier and the BBQ cook off in North WildWood. Reviews on those great things will be posted soon.

We always pull our trailer and we were looking for a closer camping site then the one we had used in the past years. We usually don’t look at camp grounds outside of our memberships. But we found a gem in King Nummy Trail Campground which was just minutes from Jersey Shore and everything we wanted to see.

Upon pulling into this family owned campground, we knew it was going to be a winner. Shade everywhere and clean sites welcomed us. Sites run $40.00 daily from June 18^th to Sept. 6^th. Then they drop to $32.00. Each site has cable TV hook up, daily trash collection and recycling at the site, electric, water, and shade. Sewer hookup is not offered, but a honeywagon service is available for $4.00. There are also two swimming pools, a gameroom, basketball, volleyball, playgrounds and much more.

The best part was the staff! We just pulled in and didn’t realize there was no sewer hookup until we had unhitched the truck. Along came the honey wagon. He was dumping the trailer next to us and gladly did our trailer BEFORE we got a change to pay AND didn’t put us “on the list to come back”. Any rig owner will tell you that is service!

The next staff member to excel was Nancy in the front office. I have a hat that I purchased in Peru about 15 years ago. I love this hat and it has served me well. Don’t you know, after a full day of fun in the sun at Morey’s Pier, I feel asleep on the short tram ride down the board walk to our parking spot. We were in the truck before I woke enough to realize that I had left it! We waited for the tram, checked the tram office and decided that the hat was gone. I had gotten a phone number to call one more time, but it proved to be discontinued. In one final try I called King Nummy’s front office, got Nancy and explained my dilemma. Nancy kicked into gear! She found a phone number for the tram that worked, called and found out the hat was there, and even offered to get the hat and send it to me if we were leaving this second!!! Now that is SERVICE!!!! My husband and I got my hat and between King Nummy Trail and getting my hat back, I was more than a happy camper!!!

Go visit them – you will NOT be sorry!!!

Knoebels Amusement Resort

If you find yourself anywhere near Elysburg, PA 17824, you owe it to yourself to stop at Knoebels Amusement Resort. Knoebels is a blast into the past and just plain family fun!!! To start with - it is free to go in and just roam, play games, eat wonderful food, or just take in the atmosphere. When is the last time you went to a park like that other than a shopping lot mobile fair? Walking up and down the park, one gets the feeling of walking into the past and seeing this amusement park with child like amazement and excitement. The entire park is set up as a family vacation. There are cabins to rent, a HUGE camp ground directly attached, putt-putt golf, a big swimming pool and of course all the things that you would find at an amusement park.

We stayed at the campground and it was busy! They even supply wood to burn for camp fires! The coasters where right outside our door! But no need to worry about getting sleep because the entire park shuts down at 10:00 pm every night just so that you can start a camp fire and hang out with your family (if you are spending the night).

Because entry is free, you buy tickets for the rides you want to ride – just like you remembered from childhood days and the price was great too! They have all kinds of rides for all ages ranging from kiddies rides to thrill rides. We are hard core thrill riders. Both the big roller coasters, “Phoenix” and “Twister” had us hooting and hollowing for MORE! We had to purchase more tickets because we loved them so very much! We even loved the “The Haunted House” – which just received the Dark ride and Funhouse Enthusiast (DAFE) EIGHTH consecutive year of being named number one on a list of the top ten dark rides. We ended the night with homemade waffle ice cream sandwiches (yummy) and a game of “Fascination”!

If you are looking for a reasonable place to take the entire family for vacation, check out Knoebels. We only scheduled one full day there and it was not enough!

Going Off Road - Cape Hatteras National Seashore located in Outer Banks in N.C.

We have always driven a van while hauling our pull trailer. After a trip west and across the Rocky Mountains, my husband decided that it was time for a truck that could take the beating that we give vehicles on our travels. So upgrade we did. Not only did it solve hauling issues, but having a truck allowed us to participate in a form of RVing that we could not before – OFF ROAD VECHICLE DRIVING!

Off road vehicle options opened up a whole new world to us. Because we love the ocean, one of our favorite places to off road is the Cape Hatteras National Seashore located in Outer Banks in N.C. Cape Hatteras National Seashore was the first established seashore. It extends more than 70 miles from the South Nags Head to Ocracoke Inlet and covers 30,000 areas. The seashore is home to unspoiled beaches, Pea Island Wildlife Refuge, lighthouses, and over 400 species of birds. We camp at a place called “Sands of Time”, which is a wonderful campground with a friendly staff. The Sands of Time camp ground is located in Waves, N.C. and is open to the public. They do except Pass Port America members at a discount, which made it $20.00 plus electricity per night for camping. They offer full hook up of electric, water, sewage and cable T.V. You can also purchase WIFI time from a service provider ( $25.00 for seven days). Everything we needed to keep our cats and ourselves comfortable. They do not have a swimming pool, but access to a beach is just minutes away via driving.

Once landed and camp is set up, we get ready for our off road adventures. We deflated our tires (deflate each tire to 20 lbs), packed the picnic basket, grill, chairs, blankets, portable picnic table and drove to a spot that seemed like we owned the beach with very few others around. I can’t describe the peace and pleasure that we all get while out there watching and playing in the sea!

We are still novices, but here are a few of the important tips we learned from others that have been doing this a LONG time.

1. If you don’t have a four wheel vehicle – don’t do this!!! You WILL get stuck and if no one can get you out there is a $200.00 towing fee from the few places that do tow.

2. Do put your vehicle into 4 wheel drive.

3. Deflate your tires to 20 lbs weight.

4. Don’t drive on soft sand. It can look lose and fluffy. It can look like white snow. But if you drive into it, you will get stuck! The beaches often get softer if there has not been any rain for awhile, so watch where you are driving.

5. Don’t drive on “orange” or “red” sand. These are really beds of shells. You will sink and you can’t get traction.

6. DO drive in the tire paths that are already there. These tracks are harder and you will not sink.

7. Don’t park below the wreck line. The wreck line is the line of seaweed and debris from the last high tide. Time passes fast out there and you don’t want your vehicle to suddenly become surrounded by sea water as the tide starts to come back into shore.

8. When you find the spot that you want to park at, back toward the water. Then pull forward and backwards a few times to pack the sand under your tires.

9. Angle your vehicle so that you can pull forward gradually from the water when you park. Going straight and making a sharp turn may cause you to get stuck in the sand.

Be safe and have fun. Remember to carry out any trash you create along with any you see. Let’s try to keep the Cape Hatteras National Seashore a treasure that we can pass down to many generations!

28th Annual Rogallo Kite Festival

With our love of the Outer Banks, we have been camping in this area for 23 years. So, we find ourselves in the area on June 13^th just in time for the 28^th Annual Rogallo Kite Festival at Jockey’s ridge State Park in Nags head, N. C. Co-hosting the event was Kitty Hawk Kites. You can park at the state park or Kitty Hawk Kites. Kitty Hawk Kites had games and kite making activities along with available parking for those that could not walk the distance and still wanted to see the kites. There is also a nice shop to get an ice cream treat.

Jockey’s Ridge is the tallest natural sand dune system in the Eastern United States. Small wonder then that this is the historical site of the Wright brother’s famous flights. Cost of Jockey Ridge state park to visit for the day -$0.00. The weather was perfect for the kites that hit the air. Crabs (kites) on the sand, a giant squid and some wind gliders grabbed one’s attention. As did the number of people lined up to try out wind gliding. Several folks brought their kites and the sky was full of bright colors floating above us. Although the Kite festival was June 13^th, you can find people flying kits on Jockey’s ridge almost year round. Take your own and have some fun with it! We had a picnic lunch after wards in the shade of a tree at Jockey's ridge.

The history of kites is really a very interesting one. The inventors of the kites are we know them, with flexible wings, where Francis and Gertrude Rogallo. There are wonderful plaques telling the story of how Francis had been an inventor or things since childhood at Kitty Hawk Kites. As an adult Francis became the director of all low speed wind tunnel research at Langely. Without his flexible wings delta kites, stunt kites, hang gliding, kite boarding and sport parachuting and paragliding would not have evolved. He and his wife took clues from nature while creating the flexing material. They then turned the patent over to NASA so that everyone in the world would benefit from his discovery. A nonprofit corporation was established in 1992 to honor the Rogallos and to protect the legacy of free flight for all people.

Natural Antibacterial and Antiseptic Spray

I just wanted to pass on a wonderful natural recipe for making your own, cheap and effective, antibacterial spray. My husband uses it for athlete's foot. I found that is works for so very much more!

To use the Tea Tree oil foot spray, apply directly to the feet as needed. Use as often as necessary for relief from itching, burning or fungal infections, or just to refresh tired feet!

1. Add 1/4 cup distilled or spring water and 1/4 cup vodka or pure grain alcohol to a mixing bowl. Stir to combine thoroughly.

2. Add approximately 50 to 60 drops or 1tsp. of Tea Tree oil to the alcohol and water.

3. Transfer the Tea Tree oil foot spray into a clean plastic spray bottle and secure the lid. If a spray bottle isn't available, the solution can be stored in a spritzer bottle.

4. Label the bottle with the contents and store in a cool, dry place out of direct sunlight and away from sources of heat when not in use.

The wonder ingredient is Tea Tree Oil! Tea Tree oil originates in Australia, where it is extracted from the leaves of the native Melaleuca alternifolia tree. The oil has been used for centuries as a remedy for all types of fungus, as it has strong antibacterial and antiseptic properties. Because of these properties, tea tree oil makes a wonderful foot spray for athlete's foot or any type of foot fungus. I also use Tea Tree oil in my home made wet wipes. The spray can even be applied through stockings to help revive tired feet or used to eliminate and control foot order. The recipe yields approximately 4 ounces of tea tree oil foot spray. Just in time for summer!

Free Professional Women’s Networking Meeting

On Monday April 19, 2010, I attended a Free Professional Women’s Networking Meeting provided by independent Mary Kay Professionals. The goal was to help other professionals promote their business, service, product or cause. It was held at a Summa Wellness Institute in Hudson, Ohio.

Why was this meeting so special for me? It marked the first time in 8 years that I was well enough to attend and participate in a meeting. I can’t tell you how wonderful it was to be able to stand up, speak clearly and still be able to breathe!! It also gave me great hope as I saw that other women were doing the same thing that I was doing – starting and running their own businesses!!! Who says that American ingenuity is gone?? Can’t prove that by me!!!

I want to thank Diane Pack, whom invited me to attend this powerhouse meeting. Second, I would like to thank all of her supporting leadership. You ladies really shine.

Turkey Pot Pie

HAPPY THANKSGIVING FROM CAMP2SEE

Turkey Pot Pie

2 cans Campbell Cream of Potato Soup

1 - 16 oz. can of Veg-All, drained

2 cups cooked diced turkey

1/2 cup of milk

1/2 tsp. Thyme

1/2 tsp. black pepper

2 - 9" frozen or ready made pie crusts

Combine first 6 ingredients. Spoon into prepared pie crust. Cover with top crust, crimp edges to seal. Slit top crust.

Optional - you can brush beaten egg on pie crust.

Bake at 375 for 45 mins, or until crust is golden brown. You may want to cover edges with tin foil for some of the baking time so it doesn't get too dark. Cool 20 mins. before cutting.
